So this is what I've come to... another mini dish!
Ever since I saw mini lobster rolls at work over the summer, this has been on my mind to try at home. My take of it came out to be mini bulgogi rolls. You can find recipes for each component from my previous posts.
Cheese puff fingers are pretty soft, but once you cut them in half and stuff bulgogi and radish salad in, they become mini rolls that hold the content surprisingly well even after sitting for an hour. You can make this a few days ahead and freeze them. Just let them sit at room temperature for 30 minutes or warm them up for a couple of minutes in a 350 F degree oven when you need to use them.
Bulgogi, thin beef slices marinated in flavored soy sauce seasoning and definitely one of the most popular Korean dishes, is chopped up to fit in the mini rolls. I used the bulgogi marinade from my Bulgogi Hot Pot post, but reduced the soy sauce to 2 tablespoons since I'm only marinating meat here and not seasoning for the whole hot pot. Bulgogi can be made a day ahead and refrigerated.
Kimchi-style radish carrot salad is from my previous post but it has been used many times over in my kitchen. This can be also made a day ahead to make mini bulgogi rolls.
Separately, they are great to as a meal or an afternoon snack, probably with some drinks of your choice.
Together, they become one little cute dish (of many rolls), possibly for your next party at home. You can make all the components at least a day ahead. Just assemble them together and sprinkle some sesame seeds and chopped chives for garnish on the day of the party.
On a related note, I am teaching a Bulgogi Hot Pot class at the new Manhattan location (Gotham West Market, 600 11th Ave) of the Brooklyn Kitchen on Wednesday, January 8th AND its Brooklyn location on Tuesday, January 14th.
