While I'm on a kimchi kick, let me share another idea for kimchi bacon fried rice. Follow the same recipe from my Kimchi Bacon Fried Rice (김치 볶음밥), just replace rice with quinoa. If you don't have leftover cold rice and have to start new rice anyway, try making quinoa for the recipe.
Start with quinoa according to the package direction, then have everything else ready - up to sautéing kimchi. When quinoa is cooked - soft, plump and translucent, add it to sautéed kimchi and bacon. You don't need to cool quinoa before using for this dish.
While quinoa doesn't have the sticky texture of rice, it has fun little soft pops that work well with, what else, kimchi and bacon. I also like it cold, a pleasant accidental finding I had from the leftover kept in the refrigerator overnight.
I found the red quinoa used in the picture above at Trader Joe's. It makes a very dramatic looking kimchi bacon fried quinoa.
