I'm going back to Whole Foods next Wednesday, July 25th, to show more of how to use some of the widely available, yet not often used ingredients to make easy, delicious dishes. I thought of going all out to prepare some chilled dishes for the summer, but then decided to stay true to the Korean spirit. When it's hot outside and we tend to grab something cold all the time, once in a while, we need some warming dishes to bring our boides back in balance. Just yesterday was the first of the three boknal (복날) in Korea, marking the first of the three hottest days of the summer. It's also the day that people eat hot chicken soup (삼계탕 - sam gye tang).
This is a demo class that lasts one hour and a half. Simple dish names do not describe the whole content that will be covered during the class, but here is a quick overview of the class. My focus will be on explaining how to use the ingredients in versatile ways - such as using tea for savory cooking, 'quick' cooking of stubborn brown rice, easy handling of rock-hard squash, layering natural flavors to name a few, as in the dishes below as well as tips to make other dishes. Don't worry, the classroom is well air-conditioned, and I will make a sorbet for a dessert, so you will stay cool as you learn and taste some heart-warming dishes.
