I had seen pictures of broccoli tree variations before, so I tried my own version for a friend's holiday party last year. Blanched broccoli florets were attached to a stand of mashed potatoes to form a Christmas tree with roasted beet ornaments. Mini cheesecakes and tapioca pearls plumped with red wine syrup were meant to resemble candles.
...The issue was that in order to use mashed potatoes as a tree stand, it had to be firm, meaning chilled enough. But who likes cold mashed potatoes?
This year I'm taking a break from any sort of vegetable trees resembling any other trees. I may be going through a cook's block specifically on broccoli and trees.
