Slowly roasting fresh chestnuts on a stovetop is simple in preparation. Rinse and wipe chestnuts dry, make an incision with a small knife, place them in a cast iron pan over low heat for 30 minutes or so until the inside becomes soft. Turn the chestnuts upside down halfway through.
I also like the sensory stimulation leading up to eating the roasted chestnuts - the crackling of roasting, the color turning bright yellow and the sweet nutty air filling up the kitchen. After all that patience, I can't wait to open the chestnuts fast enough when they are still too hot.
